Sweet Potato Brownies

Maddi and I wanted to make some sweet potato brownies and we tried a few recipes but it ended like a scene from Goldilocks; one was too dry, one was too bland and the other, well I think it should have been renamed "Sweet Potato Cardboardies" :)
We wanted something super healthy but we also wanted them to have the texture and flavour of something wicked and naughty, so I had a play, made some tweaks and here's my Sweet Potato Brownie recipe:
These brownies are lush. They are super moist, full of flavour and best of all they are packed with superfoods (and they do not taste like cardboard). They are easy to make, they store well and the flavour just gets better and better with each day.
They contain basic ingredients that you will find in your pantry or at the health food shop, so with a little preparation, you can whip up a batch of brownies in no time.
We wanted the sweet potato to really shine in these brownies and it gives them that lush, moist texture. They are sweetened with Manuka honey, Medjool dates and a small sprinkling of dark chocolate chips (these choc chips are optional, it works just as well without).
You will need some oat flour but fear not, you can make your own by simply blitzing some rolled oats in the food processor until it becomes a flour consistency. Its actually cheaper to do it this way than buying it from the health food shops and I make a big batch to store in the pantry for certain recipes.
My recipe makes a batch of twelve brownies but just be careful of your oven. I cook mine at 160C for around 20 minutes and then I turn the oven off and leave them in there cooking for a further 5-8 minutes so that the top doesn't burn or go too hard. You know your oven best, so keep a close eye on it as it cooks. You will get a slightly over brown top but don't let it burn.
A Sweet Potato Brownie is perfect for the lunchbox and Maddi takes one to work with her everyday. Its a nice treat to have for afternoon tea and it keeps her away from those boxes of fundraising chocolates that her office workmates bring in and tempt her with :)
They really do taste as if you are having something naughty but you are actually eating one of your 5-a-day, your boosting your immune system and your enhancing your bodies ability to absorb iron (something both Maddi and I struggle with).
