Craisin Cookies

The wonderful aromas of Christmas baking have been wafting through my kitchen for weeks now. There's always something in the oven and if not, then the delicious scent of my Gingerbread candle has been a wonderful festive alternative.

Yesterday I baked a batch of Craisin Cookies to take to a friend's house for our annual Christmas catch up and I thought I'd share the recipe with you.


These cookies are soft, sweet and oh so yummy, and you tend to eat way more than you should - that's what New Year Resolutions are for right? ;) They are filled with Craisins (dried cranberries) and white chocolate chips and they add that festive touch to any Christmas celebration.

They have a gorgeous texture and every mouthful is a burst of Christmas flavor. The cookie is soft but the crunch of the chocolate and the chewiness of the Craisins make them a texture explosion on the tastebuds.


They are super easy to make with simple ingredients and you can bake a batch in less than thirty minutes. I like to keep my cookie tins full at this time of year and you can replenish your stash quickly and easily with simple recipes like my Craisin Cookies.

The dough is quite firm, making them easy to shape into cookies and I like to make them quite large, yielding twelve decent sized cookies - make them smaller if you want, I'm a go big or go home kind of cookie baker.


The cookies are suitable for freezing or alternately you could freeze the dough and bake the cookies when you need them. If you like to be super organised for Christmas, then freezing is the perfect option and it's one job you can mark off your ever-growing list.

They do store well in an airtight container and they retain their soft texture and subtle flavor for at least 3-4 days.


I started baking Craisin Cookies when the kids were little, and they needed something to leave out for Santa - I mean if hubby and I had to stay up late to play Santa then we definitely deserved a yummy snack to nibble on right ;)

They're also perfect to pop in the lunch box and they're quite popular at school Christmas parties - I think the kids love them because they're chunky and they smell amazing. You could also wrap a few in cellophane to gift to the neighbours or package them individually to add to your Christmas dinner place settings.


There really is nothing better at this time of year than snuggling down with a cheesy Christmas movie and nibbling on a yummy cookie, and these Craisin Cookies are the absolute best, especially if you've had your fill of Shortbread.
