Mini Biscoff Cheesecakes (No Bake)

Take the fuss out of your Valentine's Day menu with these Mini Biscoff Cheesecakes. They're no bake and can be prepared the day before to save you time!


I know the way to my man's heart this Valentine's Day - Mini Biscoff Cheesecakes!

Hubby is obsessed with Biscoff spread and Biscoff Lotus Biscuits and these cheesecakes are a great way to incorporate both and make my man very happy indeed! 

They are quick and easy to make, and there's no baking, plus you can prepare them the day before saving you valuable time in the kitchen as you prepare for your Valentine's Day celebrations.


The cheesecake layer is silky and smooth, and the biscuit base adds texture and that gorgeous Biscoff flavor. Drizzle them with some melted Biscoff spread and a sprinkling of crumbled Lotus biscuits and you have a quick and easy dessert to enjoy with the one you love.

Our Valentine's Day dinner is always a joint celebration as our anniversary is on the 11th. When were we first married, we'd do something special for both, but after having children they morphed into one celebration - usually with the kids in tow! We did go out a few times by ourselves, but we spent the whole time talking about them that we decided to bring them along with us! :)


This year I'm having a Valentine's Day lunch for the grandchildren, and then we'll have a seafood dinner with Mini Biscoff Cheesecakes for dessert - hubby will be in heaven!

You can make these cheesecakes the day before, but if you like a crunchy topping then decorate them prior to serving - the biscuit crumbs do soften in the fridge. 

Serve them with fresh strawberries or raspberries and a dollop of whipped cream to enhance that gorgeous caramel flavor. Simple, easy and perfect!


This recipe makes four individual cheesecakes, and they are constructed in jumbo patty pan liners which are removed prior to serving - if your patty pans are smaller, you might get five cheesecakes.

They set in the fridge overnight, but I pop them in the freezer for about 20 minutes before removing the patty pans to prevent them sticking and breaking any of the layers.

I microwave the Biscoff spread for about 30 seconds and let it cool slightly before drizzling it on top of the cheesecakes. You can omit the topping but believe me it makes these cheesecakes even more delicious.


These Mini Biscoff Cheesecakes are sinfully delicious. There is so much flavor and texture to enjoy and their petite size doesn't overload you with sweetness making them the perfect way to finish off any dinner.
