Funfetti Cookies are a summertime favorite and they add some excitement to this season of exploration and relaxation. Today I'm sharing my quick and easy recipe to delight your loved ones as well!
Summertime is the season for beach days, road trips, barbecues, picnics and hours spent lazing around the (paddling) pool with the grandchildren.
It's holiday time and during the hot season we're more relaxed, spontaneous and carefree. Our needs are simpler, and we approach life with childlike enthusiasm as we soak up everything this glorious season has to offer.
Today I'm sharing a quick and easy recipe for Funfetti Cookies. These cookies are a family favorite, and the recipe yields a big batch making them perfect for any activity or adventure we decide to embark on.
Funfetti Cookies are soft, buttery and sweet and loaded with the delightful crunch of colourful sprinkles - the sprinkles are my favorite part to be honest!
Everyone loves them and they transport easily in the picnic basket making them perfect for road trips or days spent exploring the great outdoors.
They're super quick to prepare with simple pantry ingredients, meaning you'll spend less time in a hot kitchen and more time outdoors soaking up the beautiful sunshine.
Landon and Iris love to help Nanna roll the dough into cookies and depending on how generous they're feeling, we yield between 18 - 24 cookies per batch. We made 22 from this batch but the recipe does comfortably make 24 cookies.
You can pre-prepare the dough the day before and store it covered in the fridge overnight. Leave it on the bench for 30 minutes or until at room temperature before shaping and baking the next day.
The recipe can be easily halved for a smaller batch of 12 cookies, or you can freeze half of the dough and bake them later. The frozen dough can be thawed in the fridge overnight and then brought to room temperature and baked the following day.
Get creative and add coloured sprinkles to match any occasion or any season - red and green for Christmas, pastels for Easter or orange, red and yellow for Autumn etc.
Summer is vibrant and colourful, so of course we like to add bright sprinkles with rich, fun colours. I suggest using the long thin sprinkles or the flat confetti type sprinkles to prevent the colours bleeding into the dough.
They store well in an airtight container for three or four days or you can freeze them for up to three months.
My favorite summer days are spent blowing bubbles, reading stories on the picnic blanket and sharing freshly baked Funfetti Cookies with the grandkids.
It's the simple things that make life extraordinary and memorable.
