Victoria Cupcakes

This Sunday is Mother's Day and I promised another recipe idea for your family lunch. This recipe honors all the women who have shaped my life; my mum, my grandmother's and my great grandmothers. Each of them cooked a mean one and its a recipe that most families pass down through the generations. Its the good, old faithful, humble and utterly delicious, sponge cake...... with a little bit of a twist to create my Victoria Cupcakes:


The Victoria Sponge Cake has been around for centuries and I've eaten a lot of delicious ones over the years but guess what? The recipe also makes the most amazing cupcakes!
I'm not sure if its just my family but if you put a sponge cake on the table they are less likely to eat it but pop the same mix into some cute patty papers and they will fight over the plateful :)


When I was a kid a big double layer sponge cake filled with jam and cream was the best thing ever. You'd be salivating all the way back to your seat and this slice would be almost as big as your head, I kid you not.
I have to admit though, these Victoria Cupcakes are just as lush and I love that my family enjoys them so much.


A good sponge cake recipe should consist of equal weights of egg (weighed in their shells), butter, caster sugar and flour and you probably have your own family recipe but you can try mine if you like. This is a metric conversion of my grandmother's recipe and her sponge cakes were to die for.
I've halved her recipe to yield 12 cupcakes but simply double the mixture to make the traditional two layer Victoria Sponge.


Decorating your baking is always the fun part so once the cupcakes have cooled, cut a circle out of the tops about 1/4" from the edge and scoop it out to make a pocket for the strawberry or raspberry jam. Cut a heart shape from each of the tops using a small cutter and then pipe on some whipped cream, pop on the cake hearts and give them a generous dusting of icing sugar to serve.


You can bake all the fancy recipes but you definitely can't beat a simple and delicious Victoria Sponge.
