Chocolate Cheesecake Brownies

Soft, delicious and slightly gooey, these Chocolate Cheesecake Brownies will make your afternoon coffee a pure delight!


I love a good brownie! For me, they must be slightly gooey, rich, and deliciously soft. Paired with a cup of coffee, they're the perfect excuse to stop for a few minutes, put your feet up and worry about the housework or laundry another day!

I don't bake them often, they're more of a special treat, but I made a batch of Chocolate Cheesecake Brownies over the weekend and I thought you might like the recipe too!


The cheesecake layer makes these brownies special, and don't get me started on that delicious crunchy walnut top. There's lots of yummy textures and flavours going on, and every bite is pure indulgence.

Use the best dark chocolate you can find/afford to make the brownies rich and lush - a good brownie recipe should use chocolate instead of cocoa to obtain that fudgy slightly gooey texture and that wonderful dark appearance.


I use a light ricotta for the cheesecake layer, and it's delicious. It cuts through the sweetness, and it's lighter and fluffier than a cream cheese layer. It pairs well with the dark chocolate and walnuts, and all together it's a wonderful taste sensation in the mouth.

I roughly chop my walnuts into large pieces to give the brownie a nice crunchy texture. Keep it rustic and you'll be rewarded with a lovely chunk of walnut every single bite.


The baking process is a little messy and time consuming, but so worth it! It makes between 12-16 brownies (depending on how you cut it) and they should be stored in the fridge because of the ricotta.

They taste amazing, but they also look amazing! They're very popular at parties, they're delicious served with cream as a dessert, and cut into smaller pieces they're perfect for high tea. They're also just what I needed to nibble on as I spent time reading and relaxing over the long weekend.


I'm pretty sure everyone loves a brownie and if not you definitely can't be friends with them ;). This is one of those recipes you'll bake often, and it's my families most requested brownie recipe.
