Apple Pie Cookies

Food and love are linked by a hormone reaction that emotionally attaches us to a loved one when they fed us. Make these "healthier" Apple Pie Cookies for someone special this Sunday, and feel the love!

It's apple season and our trees are loaded with juicy plump fruit, which usually means it's time to start making apple pies or crumbles. My boys love them covered in custard, cream or ice cream, but part of our 2021 family self-care goal is maintaining a healthy, balanced diet.

These Apple Pie Cookies are "healthier" than the average cookie and I thought you might like the recipe so you can bake something special for your loved ones this Valentine's Day.

I've baked the original cookie recipe for years, but I've adapted it be a more balanced snack and they still taste and smell as amazing the ones loaded with sugar and fat. I'm not into counting calories or macros etc., but I do enjoy tweaking some of my old recipes so we can still enjoy them without feeling guilty.

These Apple Pie Cookies are soft, flavoursome and oh so delicious - it's just like you're eating an apple pie or an apple crumble.

You can prepare the apple in two ways - diced like I do or grated. By dicing the apples, you bite into those juicy pieces and it's a flavor explosion in your mouth. You'll still taste the apple if it's grated, but you miss the juicy crunch.

The recipe also works well with gluten free alternatives - I have a friend who tested it out and had great success!

Most of the ingredients you need for these Apple Pie Cookies will be in your pantry and they are super easy to make - it's a quick mix and bake recipe.

The recipe makes twelve medium sized cookies, and they store well in an airtight container. You can also freeze them and pop them in the lunchboxes frozen (they will thaw by lunchtime), and they're a great snack for picnics or road trips.

I hope you enjoy these Apple Pie Cookies. As a "healthier" alternative they're still light and full of flavor and a great way to say I love you this Valentine's Day. Enjoy!
