Easter Brownie Pizza

Easter is about quality time with friends, family and chocolate, so why not bake my Easter Brownie Pizza and share it with your loved ones during the festive season!


I have a delicious recipe for you today, and although it's not an original idea, it is my version of an Easter Brownie Pizza. My recipe is put together from tried and true recipes I bake regularly.

I found the original idea on Pinterest and her pizza had lots of fresh fruit and edible flowers, and it was full of healthy ingredients (like coconut milk icing, gluten free brownie etc). It looked wickedly sinful without all the calories, but I decided if I was going to re-create it, mine was going to be the real deal - wicked, sinful and ohhh so naughty! I did add fresh fruit though ;)


It looks pretty yummy right? Well let me assure you it is! I made this one for my craft girls last week, and there was a whole lot of eating and not much sewing going on ;)

Full disclosure - this Easter Brownie Pizza is sweet! Super sweet and super delicious! The brownie base is rich and moist, and I smothered it with a light and fluffy raspberry buttercream. I topped it with fresh raspberries, strawberries and blackberries, dark chocolate bark and hard-shelled mini chocolate eggs and a garnish of fresh mint from my herb garden.


This Easter Brownie Pizza is not for the faint hearted, and there's a whole lot going on in one little cake, but if you're going to do naughty - go big or go home! ;)

I've shared the brownie base recipe before (Moist Chocolate Cake Squares), and for my Easter Brownie Pizza I halved the recipe and cooked it in a round tin to create the pizza base. Bake the base the day before you need the cake, and chill it in the fridge until you're ready.


I've also shared my buttercream recipe before, but this one is flavored with raspberries. I used frozen ones in the buttercream and saved the fresh ones for the pizza topping. 

The buttercream quantity will frost a dozen cupcakes, and it was a little more than I needed for this Easter Brownie Pizza - pop the leftovers in an air tight container in the freezer, it stores for a few months and just needs a good whisk after defrosting.


Decorate your Easter Brownie Pizza however you wish. I added fresh berries, tempered dark chocolate bark and I scattered on some store brought hard shelled mini eggs. 

It's a flavor explosion on your taste buds and if you're a chocolate lover then this recipe is definitely for you! It's lush, it's a powerhouse of sweetness and one slice will never be enough!
