Once the summer is over and the harvest has been frozen or preserved, I'm always looking for different ways to enjoy the produce. This Chocolate & Raspberry Greek Yoghurt Loaf is quick and easy and a lovely way to celebrate a successful summer season!
We harvested and froze a lot of raspberries over summer and they're perfect for delicious desserts and cakes over the colder months. We've enjoyed them in pies, muffins, as sauce for pancakes and waffles and our latest obsession is the Chocolate & Raspberry Greek Yoghurt Loaf.
This loaf is delicious and super easy to bake, plus it can be adapted in so many ways depended on what you have in the freezer or what flavor you're craving.
It's a one bowl loaf recipe and we all love less cleaning up, right? It's moist and full of flavour and even during these glorious days of autumn it's the perfect celebration of summer raspberries and chocolate.
Greek yoghurt makes any baked good moist and delicious, and if you can, match the yoghurt with the fruit - raspberry flavored yoghurt paired with frozen raspberries enhances that gorgeous raspberry flavor. Or use chocolate flavored Greek yoghurt to make it even more decadent.
It's also delicious with blueberries but chocolate and raspberries are such a classic combination and possibly our favorite comfort flavour.
It's a simple make and bake recipe and its basic ingredients that you'll probably already have in the pantry and fridge.
The cocoa and dark chocolate chips make this loaf rich and decadent without being sickly sweet and it's finished with a simple dusting of icing sugar - if you're feeling naughty, add chocolate icing or ganache instead!
You can also add nuts to the batter for texture and crunch or make it a little healthier with added flaxseeds or pumpkin seeds. Play around with different combinations and find what flavor pairing you enjoy the most.
It does freeze well, so cut it in slices and wrap them individually for a snack whenever you feel like an afternoon pick me up.
It stores well for a few days if you wrap it tightly in cling wrap and it's a great addition to the lunchbox - my boys like to take a slice with them and because of the protein in the yoghurt, it keeps them fuller for longer.
It transports well for picnics and social gatherings, and if you want to present it differently then add the mixture to muffin pans instead of the loaf tin.
