Berry Cobbler

Sweet and juicy berries topped with a cake like biscuit make this Berry Cobbler a delicious dessert everyone will enjoy! It's a quick and easy recipe and a great way to use your summer produce.

The warm summer months fill our garden with pops of bright red, blue and purple berries and grabbing a handful to eat while I water the vegetables is the perfect way to start my mornings.

Sweet or tart with subtle hints of floral, these juicy homegrown berries take the pleasure of gardening to a whole new level, surpassing the flavors of store brought produce. Our yearly harvest fills our freezer for the winter months ahead, preserving a piece of this bountiful season and the essence of a magical summer.

Miss Iris spent the day with me yesterday, so we baked the most delicious Berry Cobbler together, and we thought you might like the recipe too.

While we were baking, I was taking photos and setting up pretty shots to share with you, and I wondered how strange this all seemed to Miss Iris. Usually when I bake with the grandchildren, I'm present - no phone, no camera just one on one time with them as they learn to roll, stir, knead and bake.

Documenting our time together can be fun and it does provide a teaching moment - learning how to take and edit photos is now a required life skill.

Hopefully when Iris is much older, she will read this blog post and remember this experience fondly even if nanna made her wait to taste test our cobbler while she took photos. ;)

A Berry Cobbler is basically a pie without a crust, and the topping is a soft cake like biscuit with a crisp golden crust.

You can leave the rolling pin in the cupboard because there's no temperamental pastry to worry about, no chilling time or blind baking.

The topping consists of simple ingredients and then its flattened and spread over the berries quite rustically leaving some of the berries exposed. Be careful not to overwork the dough - you don't want a dense and unappealing biscuit texture.

The dough was Miss Iris's favorite part, and she topped the berries in true three-year-old fashion. We prefer a lot of topping on Berry Cobblers but adjust the recipe to your own tastes.

Six cups of berries are required for this Berry Cobbler, and you can use a combination of fresh berries from the garden and/or frozen berries straight from the freezer. Be mindful that some berries release more juices than others, resulting in a runnier berry layer.

I use three cups of raspberries, one and a half cups of blueberries and one and a half cups of strawberries for my cobbler and I think this flavour combination works well.

You're looking for a delicious, naturally sweetened jam like consistency in the final baking of the berry layer, and it will thicken more as the cobbler cools.

This Berry Cobbler recipe is a delicious dessert that pairs perfectly with a scoop of ice cream or a drizzle of thick cream - it's almost like scones, jam and cream with very little effort.

The kitchen was a mess, we were both covered in flour and Miss Iris went home with sticky fingers and a berry moustache, but we had a fantastic day baking and taking photos together.

The smile on her face as she ate that sweet berry goodness was well worth the messy cleanup. It is delicious so give it a try!
