Chunky Tomato and Chili Relish

I've got a super quick recipe for you today, and if you're a condiment loving family like we are then you're going to love it - pass down the sauce, mustard, relish and pickles please!

We enjoy an array of condiments at Christmas time and this Chunky Tomato and Chili Relish is a staple at our dinner table. It pairs perfectly with an array of cold meats, and it tastes amazing.

We celebrate Christmas in summer, so our tables are usually a mix of salads, cold meats, seafood and a few hot dishes to balance the meal. This relish adds texture and colour and a huge flavour punch to our Christmas plate.

I make this relish a few days prior to Christmas, because the flavour intensifies while its stored in a mason jar in the fridge and when you open that jar...yummo!

I found this recipe years ago in the very first issue of the Notebook magazine which is sadly no longer in publication. I've reduced the amount of chilli from the original recipe because it was quite overpowering for our tastes, so if you want to add more then go for it!

We love the chunky texture of this relish, but it may not be for everyone.  I prefer to cut a few of the cherry tomatoes in half and the rest into quarters because I love the rustic consistency it creates, but you can cut the tomatoes smaller, so they cook away for a smoother relish.

This relish is also perfect to pack in the picnic basket or to spice up a plate of leftovers after Christmas Day. We also love it on our BBQ meat on New Year's Eve - it keeps Christmas alive just that little bit longer.

It's also a great idea for gift giving. Just fill up some small mason jars, add some gingham fabric and ribbon, and tie on a gift card with the recipe handwritten on the back. Your neighbours will love it and they'll enjoy it into the New Year.

I hope this Chunky Tomato and Chili Relish brings a little spice and colour to your Christmas table this year.  It's a family favorite in your house and so easy to make. You're going to love it and so will your guests!

Happy Christmas cooking :)
