Raspberry Yoghurt Muffins

Frozen raspberries allow us to enjoy these juicy gems all year long. If you have some in the freezer, then show someone you love them with a batch of Raspberry Yoghurt Muffins for Valentine's Day!


I know it feels like we just packed away Christmas, but I have lots of projects ready to share with you for Valentine's Day and I thought I'd start with a quick, easy and tasty muffin recipe. 

These Raspberry Yoghurt Muffins are perfect to pop in your sweetheart's lunch box or to share over an intimate morning or afternoon tea. 

This would have to be our favorite muffin recipe at the moment, and don't worry if raspberries are not in season where you live, they work best with frozen raspberries so you can bake them any time of the year - of course use fresh if you have them!


I'm not going to say these are healthy, but they are healthier than some muffin recipes. I use Chobani Greek Yoghurt and it reduces the sweetness and gives the muffins that gorgeous flavour I love so much. 

Greek Yoghurt isn't for everyone, so use whichever yoghurt your loved ones enjoy, but remember this could make your muffins sweeter. You can also change the flavor and use blueberry yoghurt and frozen blueberries etc., but I think raspberries work best for Valentine's Day.


Call me sinful, but I do sprinkle a little demerara sugar on top of each of the muffins prior to baking. It's a small amount, around 1/2 teaspoon and it gives the muffins a lovely crust and balances out the tartness of the yoghurt and the raspberries. It's personal preference and you might decide to sprinkle them with icing sugar once they cool or serve them without any topping at all.

This recipe will make twelve medium sized muffins, and about nine if you use the café style muffin wrappers. They store well in an airtight container for 2-3 days, so you can make them ahead of time and enjoy them on the day.


I love how quick and no fuss these Raspberry Yoghurt Muffins are to bake. You simply mix the wet ingredients into the dry ingredients and away you go! The clean up is minimal and there's no need to break out the fancy equipment which can sometimes take longer to clean than it took to prepare the muffins!

It's nice to surprise your loved one with a special treat, and if my husband loves these muffins then I'm sure any man would ;)
