Golden Syrup Pudding

Winter is on the way and the one recipe that warms my soul and brings me comfort on these cold days is this Golden Syrup Pudding. I share this recipe with everyone and today I'm sharing it on the blog!


Winter has sent out an early reminder that it's on its way - it's frosty and cold! There is so much beauty to be found in this season of hibernation, but nothing beats our winter comfort foods.

The wind can howl, and the rain can batter against the windows, but true pleasure can be found in soft candlelight, warm quilts and a bowl of soul warming Golden Syrup Pudding. It's luscious, airy, sweet with mild notes of caramel, and everything you're looking for in a winter dessert. 

I share it with everyone I know because it's so, so good and today I thought it was time to share it with you. :)


Let me take you back to many many years ago, when four young (and very new mums) went on an antiquing trip to a small country town not far from where we live. It was cold and miserable and every time we moved from one antique store to the other it rained profusely.

Wet and cold, we decided to seek refuge in a country pub with a roaring log fire that served an old-style English pub menu. We were looking for coffee or hot chocolate, but the chef was very welcoming and suggested a bowl of his Golden Syrup Pudding.

What he brought out from the kitchen were bowls of light and airy cake topped with a thick almost gel like syrup that warmed us to our very soul. We couldn't thank him enough and he very generously shared his recipe with us. 


I've baked this Golden Syrup Pudding for family dinners, on movie nights or games nights with friends, as an after school treat when the winter weather chills us to the bone and for dinner on those lazy Sunday evenings when everyone craves a sweet pick me up.

It makes any winter day brighter and it dries tears, lifts spirits and relieves all the stresses of this busy life - I'm totally serious! ;)

The best way to eat the Golden Syrup Pudding is swimming in cream. I choose ice cream for the photo shoot so you could see the gorgeous airy cake, but cream is best, trust me. You could also drizzle a little extra golden syrup over it if you wish, but that's personal choice.


Packet self-saucing puddings were a household staple when I was growing up, but this Golden Syrup Pudding recipe elevated winter desserts to a whole new level, and it is super easy to make.

The cake batter can be prepared in a small dutch oven (or equivalent casserole dish), and the syrup is mixed in a seperate jug and poured over prior to baking.

It requires basic pantry ingredients and takes around fifty minutes to have it mixed, baked and on the table to enjoy. And the smells - let me tell you, the aromas from the oven will have you salivating!


One of the best things about this Golden Syrup Pudding recipe is if you're lucky enough to have leftovers (which is rare in our house), they reheat perfectly it in the microwave - sometimes the flavour is more intense!

There's nothing better than a reheated bowl of pudding for lunch the next day, so I suggest you scoop out a bit and hide it before serving it to the family! ;)

This recipe comfortably feeds four or five people and it's very easy to double the recipe for larger gatherings.


Every time I eat this luscious Golden Syrup Pudding, I'm grateful for the chef who introduced us to it and then shared his recipe. He made four young mums very happy that day and I know each of us still consider this pudding to be the ultimate winter comfort food.

    1. I just googled it for you, it says Americans call it light treacle. Hope that helps :)

  2. In Canada We used to get Golden Syrup in a big can it was thick snd delicious. I am going to try this with Maple Syrup. Thanks for the recipe! I will make it with Gluten Free Flour! I will let you know how it turns out! Today I am going to try finishing the Japanese Rice Bag I am currently working on!
