Tomato relish is tangy and full of summer flavour. It's perfect for burgers, hot dogs, roast vegetables, salads and so much more, including these Tomato Relish & Ham Muffins.
Every year during winter, the whole family heads to Hollybank Forest Reserve for a BBQ, and because everyone else is at home keeping warm in front of the heater, we basically have this beautiful place to ourselves.
The forest is breathtaking in winter and there's a meditative silence that allows you to fully relax and just be. We sip hot chocolates as the BBQ cooks and nibble on hearty snacks in between exploring the forest and playing cricket or football.
This year I baked a batch of Tomato Relish & Ham Muffins for everyone to enjoy and they were a definite hit.
These muffins are packed with ham, spinach, tomato relish, cheddar cheese, and Greek yoghurt for that extra tangy flavour. They are super simple to prepare and served with some extra relish, they are a delicious and filling snack.
You can use store brought tomato relish, but I make my own during summer and I've included my recipe as well if you're looking for a delicious way to use up your summer tomato crop.
This recipe makes twelve large muffins baked in muffin liners or fifteen muffins baked in regular patty pans.
The tomato relish adds a tangy summer flavour and it's one of my favorite ways to use up our summer harvest. It stores well and it's fun to experiment with it in different recipes.
My parents boil and peel their tomato skins before making relish, but I love the added texture and simply chop my tomatoes and reduce them with onion, brown sugar, vinegar, and spices. Some people believe that the skins add a bitterness to the relish, but they're packed with flavanols, which are good for you, increasing the nutritional value of the relish.

The Tomato Relish & Ham Muffins recipe is a quick one bowl recipe that packs a flavour punch and leaves you feeling fuller for longer. It's a great recipe for picnics, BBQ's or lunchboxes and the muffins store well in an airtight container or can be baked in advance and frozen.
They are super soft and full of texture and every mouthful bursts with that delicious tangy relish.
They're also kid friendly, providing them with plenty of protein and healthy goodness to keep them running around and exploring the forest on a cold winter's day.
Tomato Relish & Ham Muffins were the perfect snack to take to our winter BBQ. Everyone enjoyed them and I'm sure I'll be asked to bake them for all our family adventures.
