Peanut Butter and Oatmeal Cookies

Tomorrow is wedding set up day, and we have lots of volunteers helping us transform the old stone barn into a reception area.  At some point they're going to get hungry and the nearest take away shop is quite a drive, so we decided to pack a couple of baskets of goodies to snack on while we work.

Cookies are always a crowd pleaser and my Peanut Butter and Oatmeal Cookies will fill their bellies and fuel them while they work.

If you like Reese's Cups, then you're going to love these cookies. They're very similar to my Chocolate Chip Cookies only yummier - the peanut butter makes all the difference. :)

Each cookie is packed with luscious peanut butter, oats and dark chocolate chips and they're a beautiful soft cookie that everyone enjoys, plus they'll give us some much-needed energy as we work on the barn :)

Cookies are everyone's favorite so I plan on having a selection for people to choose from, but the bride has requested that there be more Peanut Butter and Oatmeal Cookies than the rest - got to keep the bride happy I guess. ;)

My recipe makes 18 large cookies, but you could make 24 smaller cookies if you wanted to make a batch for an after school treat or to pack in the lunch box.

They do spread a bit when baking so make sure you leave room on the baking trays and keep them proud when shaping them, so they don't bake too flat.

I bake six to a tray and the easiest way to shape them is to add a little water to your fingertips, so the dough doesn't stick. Shape them into a ball and then slightly flatten the tops to get that lovely cookie shape.

In my oven, these cookies take exactly eleven minutes and then I leave them on the trays for another five minutes to continue cooking. Your cookies will be crunchy on the outside but soft and luscious on the inside. Yum!

I buy my peanut butter from the health food store. You basically get to make it yourself (well operate the machine anyway) so you know exactly what's in it and trust me, it's all peanuts. I prefer a medium style peanut butter, a little bit crunchy and a little bit smooth, but either works well in this recipe so use what you already have in the pantry.

I use dark chocolate chips but carob nibs or chips work well too if you're looking to make the cookies a little bit healthier, but seriously go with the chocolate chips.

They're not an overly sweet cookie and that peanut butter flavor is the real star which is what you want. They store well in an airtight container for 4-5 days and they also freeze well if you want to make a batch or two and freeze them till you need them.

These cookies are a real favorite and I'm sure all our helpers will enjoy a nibble as we transform the barn into a wedding wonderland.
