Banana and Walnut Cake with Maple Syrup Glaze

Classic flavours and a delicious glaze make this Banana and Walnut Cake with Maple Syrup Glaze something special to share with friends and family!


Some weeks I buy bananas and they're eaten before I unpack the rest of the groceries, and other weeks they sit there and turn black in the fruit basket. Is it like that at your house? Either feast or famine?  I do have some delicious recipes for those abandoned over ripe bananas, and I thought I'd give you a look at my new favorite.

I normally bake a quick and easy Banana Bread, but lately I've being making a Banana and Walnut Cake with Maple Syrup Glaze, and this is seriously yummy! Bananas are so good for us, and you can still reap all the rewards by using them in your baking. 

This cake reminds me of thick and fluffy banana pancakes served with a scattering of nuts and a generous drizzle of maple syrup. It's super moist, it has just the right amount of sweetness and the classic flavors work so well together.  There's lots of delicious banana flavor and the glaze is just the icing on the cake - literally!

It's an easy cake to bake and you will need a small food processor, or smoothie maker to prep the banana mix, plus your electric mixer. I use my Nutri Bullet to blend the bananas, maple syrup and milk, to get that smooth, creamy consistency I'm looking for. The older the banana, the easier it is to mash up and the better the consistency. 


I love walnuts and they give this cake a gorgeous texture.  You could also try almonds, pecans or macadamia's - these all work well with banana, so I don't think it matters really!  There's a generous scattering of walnuts throughout the cake and then on top, and I like the crunch so I lightly chop them into big chunks.

The glaze adds some extra sweetness and it's the perfect finish for this cake. Make sure your cake is completely cool before drizzling the glaze, and the recipe does make a lot so decide for yourself how much glaze you like and add it slowly, so it sets and pools around those walnuts.


It's a delicate cake and quite large, so make sure you use a 9" springform cake pan to bake it in. Once it's out of the oven, leave it in the pan for about ten minutes before transferring it to a wire rack - it will be easier to handle and it's less likely to crack or break.

It's a quick cake to prepare, but it does take between 60 - 70 minutes to bake (depending on your oven) plus cooling time etc., so take that into consideration if you need the cake for a special occasion.


I love nibbling on a banana, but I have to admit I get excited when I see the over ripe ones sitting in the fruit basket - it's baking time! Whether it's muffins, bread, pancakes or this Banana and Walnut Cake with Maple Syrup Glaze, I'm happy to bake it and even happier to eat it!
