Sweet Potato and Feta Tart

One meat free meal per week is good for our health and our planet. This Sweet Potato and Feta Tart is one of my families favorite - it will tempt even the fussiest of eaters!


When Madeline was living at home, she adopted a vegetarian lifestyle for health reasons - meat made her unwell! It was the right decision for her, and I followed along because I'm not a huge meat lover anyway.

Tempting my husband and son with one vegetarian meal a week can be quite challenging, and we've had more misses than hits. I'm constantly adapting recipes to find something they like, and this Sweet Potato and Feta Tart has quickly become a family favorite - when we have a hit, I cook it often so my boys don't complain. ;)


Sweet potato is one of my favorites and this tart is loaded with it. There's also a layer of luscious spinach and garlic on the bottom, which adds extra flavour and makes this tart a delicious meal.

It's a very easy tart to make, and you can adapt the recipe according to the vegetables you have in the crisper, making it perfect for one of those clean out the fridge meals. :) If you want to throw in some mushrooms or that left over capsicum or a bit of onion, it all works fine.


This is one of those meals I can whip up early in the day and then reheat for dinner - or serve it cold with a salad if I'm really lazy! It's also perfect to take on picnics or you can slice it up and pop a piece in the lunch box - the boys tell me they eat it, so I hope they do! ;)

I usually prefer to make my own pastry but the ready rolled frozen pastry works well in this recipe and there's less prep and clean-up. It does require two sheets and there's a little waste but it's a small sacrifice for a quick and easy meal.


Looks yummy doesn't it? I can assure you it tastes yummy too!

I bake up the sweet potato in coconut oil, but that's not to everyone's taste. It took me quite a while to get my boys used to its flavor, so if it's not your thing then used a good quality olive oil instead.

Sometimes I add dry herbs for more flavor, and sometimes I add dried parsley flakes for extra colour - I'll leave that one up to you and your individual family tastes.


One meat free meal a week is good for your health and it makes you get creative with vegetables, and with what's going on in the world right now we need recipes that are easy to adapt with the produce available to us.

  1. Sounds delicious and I would love it but husband doesn't like sweet potato or spinach!

    1. Took me ages to get hubby to even try sweet potato. This recipe can be adapted in so many ways though. Try using pumpkin or mushrooms or cherry tomatoes instead - just keep playing till you find what your family loves :)
